Each November, Beaune – an otherwise sleepy town – comes alive. Suddenly you’ll find music pumping from bistros, food stalls and bars popping up in any square or side street, and a particularly high influx of tourists: all there for Les Trois Glorieuses, the three-day festival that draws wine-lovers from around the world.

The core event of the weekend is the Vente des Vins, the famous wine auction of the Hospices de Beaune – still used to fund the local hospital as well as charity work further afield. I dove into the history of this institution, and the building that sits at the heart of the town, and the wines it produces – and why they’re quite so sought-after.
